My first blanket however, was for my nephew in 1991 when I was just finishing up High School. It was a tied blanket made with two pieces of fabric... no piecing. The batting was lumpy, the binding was... well... there, and the ties were uneven.

I don't think I ever made a niece or nephew a blanket like that again.

Then in college I made some quilt tops, but they were all just giant squares pieced together. They were all tied quilts and connected to the back envelope style with no binding. Binding has always scared me. I have made my daughter several quilts for her bed but they too have all been tied and are either in large squares or big strip quilts.

I made this cute picnic blanket one year that was a watermelon design on one side and then a variegated green on the other side. It was tied with black yarn. I intended to learn how to bind a quilt and even bought the binding. But some 5+ years later it still had the batting sticking out... but we used it that way.

One day my neighbor came over and we were having a picnic in the backyard on the watermelon blanket and she is like... "why is your blanket not done" She was horrified, so she took my little blanket home and finished the binding for me. THANK YOU Martha!

So lately I haven't been doing much sewing and I miss it. I also have gained an appreciation for quilting and people who hand quilt. So I decided to try and learn some quilting other than large squares and strip quilt tops. I also wanted to try my hand and actually quilting the tops on my sewing machine instead of just tying them.

Plus my nephew, who received my first quilt ever, is having his first child in January. So he gets to be the guinea pig again.

I decided to make a blanket like this.

It didn't look too hard for me.
However, quilting on a sewing machine, in straight lines, WAS hard.
Here was my finished project before the binding.

So then I freaked out a bit. I watched all of these videos on how to make your own blanket binding and then how to sew it to your blanket. While it looked easy, connecting the fabric strips into a STRAIGHT binding was NOT easy. I messed up in a few places and I think that is why it was harder to bind my quilt. Anyway, yesterday I bound my first quilt with binding I made myself. Here is the finished project.

I purchased fabric to make a boy blanket... since the chances of Jake having a girl are pretty slim in our family. So that will be my next project... and then I bought ladybug fabric... BECAUSE I can't help myself!
We purchased 'Miles', a seal colored Italian greyhound with irish markings in June 2014. He was a high energy puppy that grew into a mild manner sweetheart who is more of a spoiled baby.
We sure do love him
Then last July, we brought 'Willow' into our home. She is a smaller blue colored Italian Greyhound with very little white on her. She is very skittish and yet is a cuddle bug at night. Her personality is much more normal for Italian greyhounds and she has been so much fun to have.
4 Tbsp Butter
4 Tbsp Flour
1 Cup Sour Cream
2 Cups Mexican Blend Shredded Cheese

Directions

Open cans of chicken, drain the liquid into a measuring cup. This should give you almost a cup and a half of liquid. I then add enough water to make a full 2 cups and add a bullion cube. If you don't want to do this, just use chicken broth for the full 2 cups.

Mix chicken chunks with 1 cup of the cheese. Stir until it is broken up a bit

Grease a large casserole dish with cooking spray

Put a small handful of the chicken and cheese mixture into each tortilla shell and roll them. Place in the casserole dish. They stay together better if you put the folded ends of the tortilla on the bottom.

In a skillet, melt the butter over medium heat and add the flour. Stir until smooth. Pour in the chicken broth and stir. Bring to a bubble and cook for a couple of minutes. The sauce should thicken. Add the chili's and sour cram and stir until smooth.

Remove from the heat and pour over the rolled tortillas.

Top with remaining 1 cup of cheese.

Bake at 350 degrees for 20 minutes

Turn the oven to broil and brown the top (optional)

This is a great meal for the family.... my kids sure love it.
BTW.... I have used both flour and corn tortillas. The flour are easier to roll and don't break as easily, but I actually like the white corn shells better. But really, it doesn't matter what you use.Charityhttp://www.blogger.com/profile/05910735207508962562noreply@blogger.com0tag:blogger.com,1999:blog-1964233599113839126.post-52006462483500802452013-08-20T11:24:00.002-06:002013-08-20T11:29:00.261-06:00PART 7 NINE YEARS LATER

9 year anniversary

I thought today, on this 9 year anniversary, I would add to my story, seeing as how so very much has changed in my life over the last few years.

First of all I need to tell you that on August 4th I woke up, stepped out of bed and was immediately bombarded with intense pain in my left leg and foot. I laid back down for a bit until the pain subsided a bit and then tried again, only to have the same response. I realized that I could feel the bottom of my foot, which I haven’t felt in over nine years. It was really weird when I stepped on a cookie crumb and could feel it. It was also really hard to walk because I have become so used to walking on a leg with so little feeling on the outside. As the day progressed I realized that I could feel more and more of my left leg and foot. I went to bed that night in so very much pain, and kind of hoped that when I woke up my leg would be back to being mostly numb. But that didn’t happen. As Monday and Tuesday passed and more and more feeling returned so did more and more nerve pain. It has been two weeks now and I’ve come to accept that this is my new normal. I see the doctor tomorrow, but I know that until I can become accustomed to the new pain level I am going to struggle… as is my family.

Now let me tell you a bit about my family… and then I will get back to my medical stuff.

In February of 2012 I was asked out on a date by a wonderful friend. Six months later, on August 4th he asked me to marry me. We were married for time and all eternity in the Bountiful Utah LDS temple. G. has three sons and a daughter, and I have a daughter. So overnight I went from a family of two, to a family of seven. It is so wacky when I think about it.

The three youngest kids live with us, and I have to say it has been really difficult adjusting my life so that everything gets done and everyone’s needs are met. I don’t get to rest my body as much as I used to, so my pain level increased. While at first it was difficult, it has become easier to deal with. I love being married to G, he is the love of my life and such a wonderful, patient and loving husband.

I have to admit that the effects of my medical condition are hard on the family at times and I struggle with that. Before it was just me and my daughter, and even then I struggled hard with not being able to do certain things with her, or having bad days when I couldn’t get out of bed or was really tired. Those feelings of inadequacy and feeling like a burden have increased tenfold. I try to not talk to anyone about how I feel on any given day, but I know my husband struggles with it and doesn’t know how to handle it or really how to feel about it all. And that saddens me. There are many times I just wish I were normal and that my husband and his kids didn’t have to deal with the pains and frustrations I bring to the table. Don’t get me wrong, not every day is hard, and my husband has implemented a schedule so the kids help with cooking and cleaning. But there are still many days I come home from work exhausted and in so much pain and know that I have a ton of stuff waiting for me. It is hard… but with it comes the blessings of feeling like I am being a good wife and mother.

And that matters a ton.

So now that the feeling has returned… for who knows what reason, to my leg and foot, and with it has come an increase in nerve pain, I worry about the effects this change will have on my family. The over the counter medication I was taking (instead of taking narcotics), doesn’t seem to help much and the narcotic medication I have doesn’t work extremely well either. I’m hoping my doctor can give me some hope tomorrow as far as the pain is concerned. But I do know that over time you get used to the nerve pain… that is what happened in the beginning. I’m hoping that will happen again.

I will keep you posted.Charityhttp://www.blogger.com/profile/05910735207508962562noreply@blogger.com0tag:blogger.com,1999:blog-1964233599113839126.post-65427755020672095712013-06-10T12:21:00.005-06:002013-06-10T12:21:59.768-06:00BACON HONEY MUSTARD CHICKEN (Alice Springs Chicken)Okay.... this will make the man in your life drool.... because as my sweet husband says "everything is better with bacon."
I promise, there will be drooling involved!!!

A few months back, I happened upon a recipe on a friends facebook page called "Alice Springs Chicken" that was a knock-off from a restaurant. It had bacon in it, and since my husband just LOOOOVES bacon, I decided to give it a whirl. I made a few adjustments, but here you go.

BACON HONEY MUSTARD CHICKEN (Alice Springs Chicken)

6 boneless skinless chicken breasts

Lowry's Seasoning Salt
8 strips of bacon
1 cup sliced fresh mushroom
2 cups shredded cheese
Honey Mustard Sauce

1/4 cup yellow mustard

1/3 cup honey
2 Tbsp. Mayonnaise
2 teaspoons dried onion flakes

• Either cut or pound chicken so that it is the same thickness and is about a half inch thick.

• Make honey mustard sauce by mixing mustard, honey, onion flakes and mayonnaise in a small bowl.

• Sprinkle the chicken breasts with Lowry's seasoning salt (both sides).

• Cook bacon in a large skillet until crisp. Remove bacon, break into pieces and set aside.

• Do not discard grease.

• Cook chicken in the bacon grease for 5 minutes per side, or until browned.

• Place chicken in a 9" × 13" casserole dish.

• Spread honey mustard sauce over each piece of chicken

• Sprinkle with bacon

• Add chopped mushrooms and cheese to each chicken breast.

Bake in a 350° oven for 30 minutes, or until cheese is melted and chicken is done.

Each package makes one layer. There are 8 layers in all, two of each color. There is a clear layer, meaning you can see through the jello and a milky layer that uses the milk.

Before you begin, here are a few pointers. The first layer takes the longest to set up—after that, the next layers firm up faster. You CAN mix up the next layer while the previous one is setting up, but be careful not to mix it too soon or it will set up before you are ready.

FOR EACH CLEAR LAYER:
Boil 1 cup of water in a small pan. Pour water into a bowl and mix in one package of jello. Stir until jello is dissolved.

Add 1/2 cup of cold water. Stir and then pour into an 8×11 glass casserole dish. Place into the fridge until the jello is set.

FOR EACH MILKY LAYER:
Boil 1 cup of water in a small pan. Pour water into a bowl and mix in one package of jello. Stir until jello is dissolved.

Add 1/2 cup of evaporated milk. Stir and then CAREFULLY pour into the 8×11 glass casserole dish on top of the previous layer. Place into the fridge until jello is set.

Alternate the layers so that the same colors are on top of each other. (Clear Green, Milky Green, Clear Red, Milky Red, Clear Orange, Milky Orange, Clear Yellow, Milky Yellow).

Meet Hershey and Lilly! We added these two cute faces to our family on September 23rd 2011 after the tragic deaths of Daisy and Pokey. Lilly and Hershey are sisters, and as such are able to share a cage and look a LOT alike. However, on closer inspection, Hershey (on the left) has a darker coat and a lot more white speckles on her neck and face...
And she has that mischievous gleam in her eye.
I should have noticed that on day one...but I was just too taken back on how soft and cute and soft...and...well...soft she was.
She was masking her true personality.
We will get to that a little later!
Hershey is my daughter Emmi's bunny and Lilly is mine.

Here are Daisy and Pokey. Daisy was my bunny and is the same breed as our new bunnies, a mini-rex. We called her our "cow bunny" because she looked like a black and white cow. Daisy was a fun loving and friendly bunny who liked to do flips in the air. Pokey was my daughters bunny and was a mixed breed. She was a mini-lop and rex mix. While she wasn't as soft as Daisy, she had floppy ears that she didn't have full control of. It was seriously cute.

Daisy lived in our laundry room in a makeshift cage for 3 years, Pokey lived in a separate but similar enclosure in our laundry room for four years. The biggest issues we had with Daisy and Pokey were that they didn't get along after about fifteen minutes, so we couldn't put them together. Daisy liked to chew on everything: pine cones, wood, furniture, your shirt....etc. Pokey on the other hand liked to pull at the carpet. OH and he once peed in mid-air on my nephew.
This is our other family member, Tipsy. Tipsy was a gift from a college boyfriend during I time in my life when I was dealing with a lot. Tipsy has been part of my family since April 1997 and has pestered, bugged, woken me up, attacked me, meowed until I was deaf and cuddled up with me in bed ever since. So pretty much, he is just like my child.

Tipsy is very territorial and does not like other animals. So when I decided to get rabbits I was a bit nervous as to how he would react. The first few months were iffy, but then Tipsy warmed up to the bunnies (as much as Tipsy can warm up to another animal). His favorite bunny to play with was Pokey. The two of them would chase each other around the family room. Tipsy would bat the bunnies ears and then the bunny would paw at the cat. It really was cute.
And then our precious bunnies died within three days of each other the beginning of September. At first I didn't think I would ever get rabbits again, but by the end of September my daughter had talked me into looking for new family members.
Meet Hershey. Hershey is my daughters rabbit. She looks so cute and innocent. HAHAHA! She and Lilly share an enclosure similar to the one our previous rabbits occupied.

The floor has a plastic tablecloth with a thick plastic over the top. A pet exercise pen is used as a perimeter with their cage in one corner and a litter box in the other.

For four years we had rabbits in this enclosure with NO PROBLEMS.

Within one week Hershey had escaped.

I was floored. One hour there were two rabbits, the next there was only one.

At first I thought there was an opening in the enclosure she escaped through so I made sure it was snapped together tightly and then went upstairs.
The next day she got out again.
We figured out that she would climb the water bottle (which at that time was hooked to the outside of the cage) hop onto the cement ledge in the basement and then hop down to freedom. Pretty smart rabbit.
So we moved the water bottle.
A week later she got out again!
At this point I changed her name to HOUDINI!

So I added a partial cover to the enclosure that attached to their cage. The cover can be lifted to feed them, but keeps the rabbits from using the leverage of their cage to climb out.
I week later she escaped again!

I was puzzled, so I sat downstairs one night for over an hour, watching the bunnies and noticed that Hershey would stand on her back feet and try and climb the cage.
Yes, climb!

So I found an old window screen and put it over the whole enclosure.

A week later....
Yeah, I know, you get the picture by now.
She found freedom again, and again and again.
Each time I would add another think to the cage to try and keep the bunny in.
By last night her enclosure looked like this:

A far cry from how it had been for four years. Hershey had managed in one week to do what our previous rabbits had not managed in four years.

And what about Lilly. Well this whole time she had remained in the cage, like the obedient bunny I thought she was.

Until last night!

I'll get to THAT story in a minute. First I have to tell you that last week I watched as Hershey (aka Houdini) was giving Lilly escape lessons. He would stand up against the cage and then wait until she did the same. I even watched in horror as Hershey climbed on Lillys back and then stood up and put her paws on the top of the enclosure.
Good Grief! That rabbit is going to be the death of me.

So last night I am awakened by sounds upstairs (we live in a split level home with four levels...the rabbits are on the basement level, our bedrooms are on the top). Since our cat Tipsy enjoys waking us almost every night with his nocturnal prowling, I lifted my head, hollered at the cat and then proceeded to go back to sleep, only to be woken up twice more.

By the third time I decided that the cat was going to spend the rest of the night in the basement so I could sleep, but as I jumped out of bed I watched as the cat ran one way and something else ran the other way... or hopped the other way. Keep in mind that up until this point every time Hershey had escaped she had stayed in the basement.

So I flip on the hall light only to realize that the offending rabbit is none other than Lilly...my sweet innocent bunny who had never escaped before.

So I pick her up, take her to the basement and put her in the cage, only to realize that there are NO bunnies in the cage, Hershey too has escaped.

30 minutes later we found Hershey in a garbage can.....She had managed to hop off of the cement ledge into the laundry room trash can and then tip it over...trapping herself.

Needless to say, at 10:00 this morning I bought one of these.
You do this by boiling water in a large pot and then putting the tomatoes in the boiling water for 20-30 seconds. Place them in ice water afterwards. Then you can peel them.

Cut all of the peppers and remove the seeds. If you don't remove the jalapeno seeds your salsa will not be mild.

In a food processor or chopper, chop the bell peppers, onions, jalapenos, garlic and the tomatoes. They can be chopped by hand, but the food processor is easier. Also I don't like my salsa really chunky, so the food processor works better for me. If you want chunkier salsa you can chop half of the vegetables by hand.

Put all ingredients into a large pot. Bring to boil and simmer for 25 minutes. This process boils off some of the liquid from the tomatoes.

Place the lids and rings into a small pot with water and bring the water to a boil. Leave them in the hot water until you place them on the jars.

Also, start your water bath (canner) water on the burner at this time. It takes a while to get the water boiling.

Pour the salsa into jars, leaving an inch of air at the top of the jar.

Wipe the rim of the jars with a wet cloth to get any drips off and then seal them with the lids, making sure you screw them on tight.

Place the jars into a water bath and bring the water to a boil again. The water in the bath needs to be at least an inch above the jars. Boil the salsa for 20 minuets for quart sized jars or 15 minutes for pint sized jars.

Take the bottles out of the canner and place them on a towel. they will seal as the jars cool. While she partied I shopped. At 5:00 I went to pick her up and saw a fire truck parked next to the building. I didn't think anything of it because the police and fire station aren't too far away from the swimming pool.

So I get out of the car, walk into the building only to have a nervous 16 year old worker tell me I can't pick up my daughter that I need to leave the building immediately.

I was then grabbed by a fireman and escorted from the building. He told me I needed to wait on the far side of the parking lot and that they would evacuate the building when it was safe.

My heart stopped, but I reluctantly left the building.

I heard the sirens so I ran for my car to move it so I wouldn't be blocked in by police and fire trucks.

Then I stood at the back of the parking lot and waited.

My first thought was that someone had drown, my second was a gunman... I kept thinking that we had missed the Trolley Square shooting 3 years ago because I was too lazy and decided to leave the house later and then decided on the way that I didn't want to drive to Salt Lake. So as I stood in the parking lot watching firemen and police officers surround the building and enter it I could help but think "what are the odds'?

I was hoping that because the firemen were around and by the door that it was something else and not some freak-job with violence on the mind.

I was seriously freaked that my daughter was inside.

About 5 minutes later people started to evacuated the building so I started walking towards them, looking for Emmi and not seeing her.

When I got closer to the building I knew what the problem was.

I could smell the gas and BOY was it strong. The were taping off the parking lot and didn't want anyone to start their cars. At that time I was seriously glad I had moved my car. It had been parked right next to the building where they were not allowing anyone to get to their vehicles.

Although in hindsight, starting my car was NOT a smart thing to do. But I didn't know it at the time.

I was still standing back from the building watching the last of the people exit and getting more and more upset as the time dragged on. It looked like everyone was out of the building and cuddling in groups to keep from freezing to death. (wet hair and Utah temps in February don't mix well).

I still couldn't find my daughter and was just about ready to have a panic attack when she walked out.

They had come out another exit. They had to turn around and go back through another door to get out.

I don't want to ever again have the feelings I had while standing outside of that building yesterday. I was terrified! She is the most precious part of my life and I couldn't get to her when I most wanted to.

I hugged her extra tight throughout the night.

Charityhttp://www.blogger.com/profile/05910735207508962562noreply@blogger.com0tag:blogger.com,1999:blog-1964233599113839126.post-39308671265650177192010-02-14T17:38:00.003-07:002010-02-14T17:50:47.334-07:00MY LITTLE VALENTINE

This is my little valentine. She is 4 foot 10 inches tall with short blond hair, blue eyes and a feisty attitude.

For our valentine weekend we held the annual "cousin sleepover" on Friday night. The kids had a blast, as did I. We ate, played games, painted, watched a movie...and didn't get much sleep.

Then Saturday we did some clearance shopping. There is nothing like end of the season sales to get my blood pumping. We went out to lunch with some wacky people and then did some MORE shopping.

Today, valentines day, we slept in.
